In pathfinder how would one go about making their rouge into the quintessential master thief?
What I have in mind is literally stealing the weapon's from the enemies to prevent them from fighting and to indirectly hide and redirect folks avoiding combat at all cost using stealth, diplomacy, distractions, agility, black market connections, and essentially anything else to turn me into a true thief and not an assassin or the like?
Do any useful prestige classes exist for this concept outside of master spy?

eeer I think that a strait and simple rogue fits the bill here perfectly.

Doesn't PF have a Steal combat ability for just this purpose? Max that up.

You need Disarm to take held items (weapons, wands, rods, shields etc.) from people. Steal is for things like pouches, jewelry, cloaks or sheathed weapons.

If you want to make a character around this, your first stop is likely to be Agile Maneuvers. A whip is also a good idea - this lets you both disarm and steal at range, and because you are using the whip to do it, all your weapon bonuses (e.g. Weapon Focus and the whip's enhancement bonus) will apply. If you build it correctly, this will eventually override the CMB penalty for using the whip. Finally, the whip makes you decent in combat in its own right since you can get dex to damage. If you use a whip, you can skip Agile Maneuvers entirely and just rely on Weapon Finesse instead.

Ya know, this thread gave me a character idea. One which focuses on stealing things out of his/her opponents' hands.

As others have mentioned, Steal is a combat maneuver (http://www.d20pfsrd.com/gamemastering/combat#TOC-Steal).

The Cutpurse (http://www.d20pfsrd.com/classes/core-classes/rogue/archetypes/paizo---rogue-archetypes/cutpurse) archetype may be of use to you. I can't vouch for its utility, but it replaces Trapsense and Trapfinding with two special bonuses to Sleight of Hand checks to snatch things from a target. The Halfling Filcher (http://www.d20pfsrd.com/races/core-races/halfling/filcher-rogue-halfling) racial archetype also gets the job done nicely. If your goal is to go undetected, the Burglar (http://www.d20pfsrd.com/classes/core-classes/rogue/archetypes/paizo---rogue-archetypes/burglar) archetype is an option; one of its abilities gives you a bonus to disarm traps (although it's not so useful if you traded your trap skills away for Cutpurse); the other basically lets you do what Snake does in all of the Metal Gear games, and hold still if spotted until people decide to ignore you again.

With regard to Rogue Talents, Combat Swipe gets you the Improved Steal feat, Deft Palm can let you conceal a weapon in plain sight (double bonus if it's one you just stole), Face in the Crowd can help you blend in to escape pursuit, Fast Fingers can let you roll twice on your Sleight of Hand checks, Fast Stealth lets you move quickly while sneaking, Ledge Walker lets you do that cool roof-running phantom thief stuff, Ninja Trick can let you get Hidden Weapon and conceal weapons on your person, and Without a Trace allows you to Hide when you use Evasion. Again, I can't speak to how effective some of these are, but they fit your concept.

I'll try all this out, do you know how effective it'd be in combat? Like if I won initiative could I while stealthing or invisible steal the weapons from our enemies before they attack us with them?

Sure, and in fact, they would be flat-footed (reducing their CMD and making it easier for you to succeed.) Whether you use disarm or steal would depend on whether they have the weapon drawn yet or not.

With Quick Steal, you can even full-attack and rob their jewelry first, potentially lowering the CMD for your disarm attempts. (e.g. if they are wearing a ring of protection, you steal that and they lose the deflection bonus.)
