Specifically those from the MM. You can see the difference in design between monsters in the MM and those in the MM3; so I'm asking if anybody has ever redone the MM monsters with the design philosophy of later books?

With the optimization level of many playgrounders, I'm somewhat afraid to see what CR would be assigned to what redone monsters.

Do you mean in terms of layout style or in terms of power level?

Danzibr is probably talking about power level, but the OP might be talking about how the MM3 has small section for Eberron and Faerun for each monster. I never really saw that much difference, really.

Most would be CR: 0, because it literally no longer forms a challenge.

I personally would like to see the Ogre-Mage with a proper CR and a proper LA.
And some things to make him more than "level end boss" for ogres / trolls raid.

No, none of that. MM monsters often have weird mechanics or unsynergistic builds/abilities and aren't very well-rounded. Also, the balance is often way off. Look at hydras; they have a unique mechanic just for them, and it makes them EXTREMELY deadly for their CR's. Look at the medusa; pretty much the only thing that makes her deadly is her 30ft petrifying gaze; other than that she just has her weak snake bites and 1d6 shortbow...at CR 7. A lot of the monsters have just one shtick and the rest of their build is just bland same-ness.

Whereas in the MM3, the monsters are undeniably more optimized/powerful (not necessarily a good thing, but at least they're fairly consistent). It's obvious to me that the designers simply developed better system mastery by then, and were able to build better designs for the monsters. I'm wondering what the MM monsters would have been like if they had been made then.

Kobolds would be CR: Lol nope.

Everything else would be CR: 0.

I know of the following monsters that got a "makeover":
