I am curious about testing something like this. Any tips on enjoyable ones? The one I have looked closest at is Gnomoria.

It's still in beta/early-access/whatever but I've heard good things about Clockwork Empires (http://www.clockworkempires.com/).

-Gnomoria is great and lots of fun.

-Towns has a terrible interface and is very clunky. Don't recommend it.

-Prison Architect is surprisingly dwarfy, and very well put together. Only has one z level though, but you can expand horizontally quite a bit (have yet to find a limit).
