If a Mirror Image has an AC which means an attack can miss it, then would they also have Spell Resistance to resist something like Magic Missile if the caster has SR?

No. They only have what the spell says they have.

Seconded. Mirror images only have AC, not SR.
Now, there could be an obscure PrC focused on Mirror Image that grants your mirror images SR and other nifty features (miss chance, etc.), but I doubt it.

There is no published 3.x prc that has this ability.

any successful attack against the dupe kills it, so it's irrelevant anyway.

Add Reserves of Strength and CL shenanigans for maximum profit (although mirror image would be more efficient than greater mirror image in this specific scenario due to the fact that the maximum number of images you create when casting the spells is explicitly CL-dependant, while the maximum number of images at which greater mirror image stops creating more each round isn't).

That wouldn't do anything. It's hardcapped at 8 images.

what are you talking about? greater mirror image caps at 8 at a time. it doesn't only ever create 8. if your guy has 8 clones up and I kill 1, making 7, then next round, you pop back up to 8.

Oh, right. I misread Greater Mirror Image and thought it would work like this:
- Reserves of Strength Mirror Image creates 1d4 + CL/3 images (uncapped thanks to RoS).
- Reserves of Strength Greater Mirror Image works like Mirror Image and thus creates 1d4 + CL/3 images (uncapped thanks to RoS). Moreover, it creates additional images at a rate of 1/round if there are less than 8 images (capped).

However, reading it again it seems that Greater Mirror Image's cap of 8 images applies to the whole spell, making Mirror Image even better than Greater Mirror Image (assuming RoS and CL shenanigans are possible):

No. Greater mirror image refers to mirror image for its rules text. it has a specific cap in place so RoS does not work to uncap it.

the amount of dupes created/round is not a function of level, it's just 1 a round, so again, RoS doesn't do anything

One way to think about it:

AC is about targeting: a higher AC means whatever part of you is vulnerable is tougher to hit. A moving illusion is never going to be trivial to hit.

SR is a magical property, you only have it if you have that magical property.

Yeah, exactly, the only reason a mirror image even has an AC to begin with is because a successful attack is required to remove it, and the game's basic mechanics require ANY attack to have a possibility of failing.
