Since detect evil says Aligned Undead, rather than Undead, does that mean that a chaotic good undead wouldn't be detected by detect evil, but instead only be detected by Detect Chaos and Detect Good?

Yup! You hit the nail on the head.

Another way of looking at it (assuming you still have any confusion) would be to look at the "Aligned Outsider" right below it. Of course detect evil wouldn't detect an angel, and detect good wouldn't detect a demon. Same logic applies to undead.

Just making sure, one of my players said I was misinterpreting things and that it was meant to be like 3.5e.

Wouldn't Detect Evil AND Detect Good detect a corrupted Angel (Alignment NE, subtype good)?
