...How can I make the best use of out magic initiate for a fighter now that I know I can action surge to cast two spells (or one spell and full attack)?

Magic Initiate is kind of crappy on a Fighter - even the Eldritch Knight doesn't really have the spell slots to make it worth-while.
Magic Initiate did get quite a hefty buff though with the Errata and there are some pretty cool things you can do with it - I like the idea of picking up Armor of Agathys with it and getting in some high level casts of that.
