Is deep water an insta-kill for an ooze that is not aquatic?

Oozes breathe, so they can drown. They thus would use the same rules anybody else does to survive aquatic environments (http://www.d20srd.org/srd/wilderness.htm#aquaticTerrain), which would include (likely untrained) swim checks to keep afloat.

Yes, since oozes breathe if they are not aquatic they are not adapted to either floating/swimming or breathing underwater. Some oozes float as per their description (http://www.d20pfsrd.com/bestiary/monster-listings/oozes/globster), others swim or float (http://www.d20pfsrd.com/bestiary/monster-listings/oozes/sea-scourge) and some are mistaken for bodies of water (http://www.d20pfsrd.com/bestiary/monster-listings/oozes/living-lake).

All right, so they don't float, but they can swim and with their strength it's quite easy... Interesting... A swimming ooze.

I would imagine a swimming ooze would be a lot like a jellyfish or a comb jelly. Ooze does not mean its constantly leaking out into the environment, just an amorphous, mutable, mindless creature.

And Mezlar the Magnificent looked at us across from the circular pool as he smiled. The AMF was nigh, leaving the only option to fjord and swim the pool. Ragnar and Kortek dove in and started power swimming. Mezlar laughed as he stomped on a pressure plate that we hadn't noticed. Gelatinous cubes fell from the ceiling, crashing with massive splashes into the water. Surfacing jubilantly, they looked like big icecubes floating about. They weren't perfect cubes, as their was some structure fastened to opposite surfaces of the cubes. The cubes alone were easy to dodge, but the goblins wearing rubber pants sitting astride the top surface on some sort of saddle platform aiming the harpoons were making swimming miserable for the guys.

There are a few 3.5 oozes I know of that are called out specifically as being aquatic: The Bloodbloater ooze swarm and the Flotsam ooze from the Fiend Folio, and the Teratomorph from MM2.

All the oozes in the MM list the typical volume and weight, so we can calculate the density and compare it to water. Looks like every ooze is less dense than water except the ochre jelly, which is about the same density as water... so that might be pretty close to neutral buoyancy. So they all float, except for possibly the ochre jelly.
