Like, If I wanted to be a savage fey bard could I do that?

Firstly, those are Alternative Class Features, not class features.

Secondly, yes, you can, so long as they don't overlap in what they replace. In the case of Fey/Savage, you can. However, ask your DM how he rules UA variants, because some DMs rule that they are different classes from the normal one and thus cannot take ACFs for the original class.

Sweet thanks, because as bad as people say fey bard is....for the concept I have all the inspire stuff is lost on it.

Like many things in 3.5, it follows a strict name policy, which is to say, a "Savage Bard" isn't a "Bard", and doesn't qualify for things "Bard" is required. Also, there is no "'fey' Bard", as the class name is still "Bard". The best example for this is the "Mystic Ranger" doesn't qualify for things that require "Ranger", such as the Sword of the Arcane Order feat

While many DMs seem to handwave this rule, it's still one, and you should ask your DM about how he feels about it.

Well see the idea is to make more of a battle bard that focuses more on dancing than singing.

It's not quite so clear as you make it out to be. From Dragon # 336, page 105:
The Mystic Ranger is a variant Ranger.
From page 47 of Unearthed Arcana:
With your DM’s permission, you can use any one of these variant classes in place of the standard class of the same name.
This means that "doesn't qualify" isn't necessarily correct; but "ask your DM" is definitely in order.

People who say the variant is bad don't know what they're talking about. Animal companions are great.
