Can Trap the Soul merely trap a soul of a target and leave the body alone (minus its spirit)? I know a demilich will turn the body to dust but what about the spell version?

No. There is no option for the caster to ignore parts of a spell's effect that he doesn't like.

If you need an inert body, first gain some blood/flesh/hair of the target creature, then Trap its Soul, then create a Clone of it. You now have an inert body combined with a trapped soul.
