So, just as a DM, I was wondering, what would be good sources for the Insanity Patron? A demon or Daemon seems like an easy choice in many ways, but I do like hearing how people fluff and use things like this.

Proteans are the Chaotic Neutral outsider, and are thus one option.

I don't think that is right. At least not in Pathfinder. I couldn't even find an outsider called a Patron in Pathfinder.

Anyways, with witches they have some sort of source of power. The books itself says "(A) patron is a vague and mysterious force, granting the witch power for reasons that she might not entirely understand. While these forces need not be named, they typically hold influence over one of the following forces."

The patron powers don't even really have to come from outsiders. Technically a sufficiently powerful fae can be the source as well. Or hell, be creative: since the witch spell list is a mish mash of spells from the Cleric, Druid, and Wizard/Sorcerer spell lists, their "patron" could be multiple beings at the same time, such as a Fae, a god, and an outsider. A concept that would definitely be interesting for an INSANITY patron :)
Witches and Oracles kinda have the same thing going: In order to ensure they're not alignment restricted by default, the source of their powers/spells isn't required to have a fixed source, which gives the player/DM some breathing room when determining how and where their powers originated.
The only real exception being a few archetypes like Black-Blooded Oracle where the origin is all but spelled out.

An obvious choice would be one of the Lovecraftian Great Old Ones. They are either insane themselves, inspire insanity among their followers (and anyone who observes them), or both.
