And if so do they work with the feat deadly defense?
Again just trying to verify something.

Two black tentacles sprout from your shoulder
blades and arch over your shoulders.
The tentacles have 10-foot reach and are
animate. Each round as a free action,
starting on the turn when you cast
the spell, you can direct each tentacle
to attack one opponent within reach.
The tentacles use your base attack
bonus and Strength score, and each
deals bludgeoning damage equal to
1d8 points + your Str modifier. The
tentacles threaten the area within their
reach, and each can make one attack of
opportunity per round.

As you can see, the "type" of weapon that the tentacles are remains undefined by the spell description. One might reason that they are natural weapons, but as the weapon type is left undefined by RAW, any arguments for or against any one definition must be made to your DM.

The tentacles don't count for anything - they are not weapons that you are wielding, but a spell effect that you can direct to attack.

Meaning it's completely up in the air, MEANING I have to assume it doesn't or my dm will rule that it doesn't dam it.

You don't attack with the tentacles the way you would attack with a weapon or a natural attack. You direct each tentacle to attack in much the same the way you would direct a summoned creature to attack. So even if they counted as light weapons, the tentacles would need to be the ones to have the feat Deadly Defense in order to receive the bonus.
