To be more specific, what Prestige classes offer full spellcasting and only go for 5 levels?

Are you looking for Divine or Arcane casting?

Those are the first things came in my mind:

Shadowcraft Mage, Runesmith, Earth Dreamer all offers 5 levels of spellcasting. Divine or Arcane all from Races of stone
Abjurant Champinon (CM) offers 5/5 arcane casting
Geometer (CA) offers 5/5 arcane casting
Arcane Devotee, Evereskan Tomb Guardian, Spellguard of Silverymoon (PGTF) arcane 5/5
Divine Disciple (PGTF) Divine 5/5
Archmage, (DMG) 5/5 Arcane
