Hi all

For story reasons (no need to worry about level), I need to find a Demon that sort of specializes in the undead. Any spring to mind?

You might try the Fiend of Blasphemy PrC from Fiend Folio. It can taken by most any sort of demon. But the demon lord of Undead is Orcus, and some unique demons of his with goat heads are stated out in "Ghostwalk"

There's the Artaaglith (Ghostwalk, p.157): demonic servants of Orcus (Prince of the Undead). They cast as 5th level Clerics (with the Evil and Undeath domains), have the turn undead ability (oddly, instead of rebuke), and also have animate dead, cause fear and death knell as SLAs (among others). They are often found in the company of skeletons and zombies.

The nice thing about them is you can bring them up to any CR you like by slapping Cleric levels on them, that will stack with their innate casting.

There's also the maurezhi, a Nosferatu-like demon that devours corpses (and also souls), and can take on the likenesses of those it has consumed. Oh, and it can summon ghouls.

Between the nabassu, the artaaglith, and the maurezhi, you've got some decent choices. Shadow demons might work too. There's also the blood fiend, which is a straight-up vampire demon. Seriously - it's a tanar'ri with the undead type.
