Backbiter is a spell that makes it so the next time a target tries to attack with a melee weapon the weapon turns and hits the person that is holding it the damage cant be consciously reduced though dr still applies. I am wondering that if a this was cast on a rogues weapon would the rogue take their own sneak attack damage as well because thay clearly did not see the attack coming

No, SA attack damage has nothing to do with seeing, or not seeing, the attack coming. In general, SA damage is only allowed if the target is denied their dex bonus to AC or flanked. Backbiter doesn't cause a flank or deny dex bonus to AC so there is no SA damage.

As an aside, there is a stickied thread at the top of this subforum for this type of question.

Also, rogues have Uncanny Dodge, which means even attacks they can't see coming can't catch them off-guard.

Furthermore, Backbiter specifically attacks the target's full AC - not their flat-footed AC, which means they keep Dex and Dodge bonuses (and therefore sneak attack wouldn't apply.)
