Hello!

Are there any armor enhancements / enchantments in 3.5 that grant immunity to sneak attacks? (Aside from fortification.) I'm aware of things like displacement, I'm just looking for something that straight up grants the wearer immunity.

You can't sneak attack a creature that has concealment.

Because Sneak Attack outright says it does.

Any creature that is immune to critical hits is not vulnerable to sneak attacks. The rogue must be able to see the target well enough to pick out a vital spot and must be able to reach such a spot. A rogue cannot sneak attack while striking a creature with concealment or striking the limbs of a creature whose vitals are beyond reach.

This is for a Weapon, not armor, but Warning (Magic of Faerun p. 141) is a +1 enhancement that allows you to retain your Dex to AC even when flat-footed. It doesn't take care of flanking, but it helps a lot for cheap.

Concealment can be thwarted with blindsight and probably other techniques. But not every rogue is likely to have blindsight, so it remains a good suggestion.

Check with your DM about this option. MoF is a 3.0 book. The Warning enhancement was updated in the MIC. The updated version is significantly different than the 3.0 version from MoF.

ETA: The MIC version gives a +5 insight bonus to initiative.

Bone knights get immunity to critical hits and sneak attacks. Granted, that comes at level 8 (IIRC), but earlier in the class you get a scaling chance to ignore crits and sneak attacks.
