They are:

A Truenamer
A Divine Bard
And a Monk 2/Ardent 2/Fighter 1

What's a good, reasonably challenging undead encounter to toss their way?

A couple zombies (8?) wouldn't be bad

Nothing incorporeal that's for sure

Maybe 3 bone rat swarms, and two ghasts actually that might be a bit much

A ghast and three ghouls might be pretty hefty for a party of three. Possibly deadly if they gang up on the divine bard.
Throw in a slaymate make them a sort of creepy family

I like the swarms and ghasts idea.

Edit: Thank you!

Personally, I like wraiths. It shouldn't be too hard as long as the Monk/Ardent/Fighter has a magic weapon. You might want to include a few weaker undead like skeletons or something to distract them from the wraith initially. The wraith can hide somewhere to start with.

The swarms and ghasts might be a bit much. With the reduced numbers the party is apparently like a lvl 4 party. It might prove deadly

2 necrosis carnexes and 2 raiments would be challenging and interesting: the results of evil experiments and the bundled up clothes of the victims

How about a couple of vampire spawn?

I see a Truenamer in the party
How about the truenaming monster?
Painspeaker is CR 4 Medium-sized Undead with 6 HD and Utterance of Pain (reversed moderate word of nurturing utterance as a 6th-level truenamer) every 3 turns
