How much would you guys say a magic item that changes one's height within one's size category would be worth? (For example, it'd allow a human to change his size anywhere between about 4 feet tall to about 7 feet tall, but would not change his size category.)

As far as crunch goes, I guess the effect would provide a +2 circumstance bonus to disguise and stealth.

I'm thinking 500 gp?

500 gp is probably reasonable.

A hat of disguise (1800 GP) can already change your height up to 12 inches either up or down.

Well, no, it can make you appear to be shorter or taller (in addition to many other changes), but it is an illusion. Making yourself only appear to be a foot shorter doesn't really help you the human not bump your head when visiting Dwarftown.

I was talking more of a transmutation effect.

Buying two masterwork tools, one of Disguise and one of Hide, would cost only 100 GP.

The magic item you suggest would have the slight benefit of changing size (useful when you need to reach something on the top shelf, I guess) and stacks with the masterwork tools, but is vulnerable to antimagic and dispels. I'd put it at 300-400 GP myself.

So, an item that has no mechanical effect other than allowing one to avoid dwarf-doors and/or reach the top shelf easier?

Price-wise, no idea... 500? Sounds good.
I have (or had) a couple of characters that would absolutely love such an item!

Removing the majority of the function of Alter Self, yeah 500g sounds about right.
