Sentinel doesn't allow you to reduce an enemy's speed to 0 with a bonus action in the first place. Did you mean reaction?

Short answer, by RAW, you can't. If you hit, then your target's speed becomes 0.

Possibly longer answer, if you think you should get a choice, talk to your DM, and he or she can house rule it if they think it is a reasonable change.
