Can you use Finger of Death on undead and have the corpse rise again as a zombie under your control?

The spell specifies Humanoids. Undead are a different creature type. So no.

You send negative energy coursing through a creature that you can see within range, causing it searing pain. The target must make a Constitution saving throw. It takes 7d8 + 30 necrotic damage on a failed save, or half as much damage on a successful one.
A humanoid killed by this spell rises at the start of your next turn as a zombie that is permanently under your command, following your verbal orders to the best of its ability.So by RAW you can damage it but can't re-animate it.

As a DM I might pre-warn the player that thinking logically it makes no sense for this spell to be even able to damage undead, but anyways, by RAW, above is the answer.

A few are immune, but most are just resistant. Some (such as the Zombie) aren't even that.

Even dead flesh can decay. And Necrotic damage is more or less said to be the power of death and decay.
