Do Oath Spells go against your spell slots for the day?

No? I'm not sure how you understand how spellcasting works in 5E. You simply prepare a number of spells equal to your level plus your spellcasting modifier, and can cast any of them as many times as you have slots.

So, for instance, let's say I'm a Paladin at level 3 and a Charisma of 14. I prepare 5 spells (plus my two Oath spells), and can cast ANY OF THEM up to three times. But if I cast one spell three times, I can't cast any other spells for the day.

Oath spells are automatically prepared and do not count against your prepared spells for the day. However, the correct formula is 1/2 Paladin level + Chr mod.

Spells slots are for casting: oath spell or not, you have to expend a slot to cast. "Prepared" spells is something else.
