The Ochu Trainer is very good and will do a great many things, but it won't help you cheat at the chocobo races for your freedom in disc 1.
Cheat Engine can help here. You're looking for the ff7_en process if you're running the steam version.
Step 1:
Activate your sharingan: Set time to 0.1 on the speedhack.
Step 2:
Switch to Manual Control.
Step 3:
Search for a number between 2000 and 4000 when the race starts (you're looking for your stamina).
Step 4:
Use the speed boost then search for a decreased number. Repeat this step until you find a number between 0 and 4000 (likely 1000-2000 ish (maybe a bit over 2000 if your stamina is still mostly unused, it was 1500 ish for roughly a little less than half way)) that is the only one left decreasing.
Step 5:
Freeze this number, keep your sharingan up, and speed boost continually (since your stamina will not go down) until you win the race.
