I see there are spells to conjure both fey and celestials but not fiends ? Or am I just really bad at searching ? In theory I could just cut and paste the conjure celestial could I not ?

Makes sense to me. Those spells wouldn't fit all warlocks. A Fey one wouldn't summon fiends, and a Baatorian-aligned warlock wouldn't summon Abyssally aligned fiends. And don't forget that this is UA.

Of course, it's always perfectly okay to have a Fiendlock use them if the DM permits it. Perhaps try asking?
