Suppose I wish to simulate a horde of monkeys jumping up to a player and grappling them to the ground..

How would you do this most effectively (no need to play fair) with actions/aid another, what should each monkey do in their turn?

20 (or more if needed) monkeys, CMB +0, CMD 6

Player CMB +6, CMD 20

(So 50% chance for an Aid Another to give a +2 on an attack roll for a single other monkey, only 5% chance for an unaided monkey to grapple)

Also.. what could they do once the player is grappled? (also no mercy needed, going to show this happening first to a lucky npc)

I was going to suggest a Monkey Swarm (http://www.d20pfsrd.com/bestiary/monster-listings/animals/primates/primate-monkey-swarm), but I just noticed that swarms cannot grapple.

Multiple creatures can grapple (http://www.d20pfsrd.com/gamemastering/combat#TOC-Grapple) at the same time, each after the first giving a +2 bonus automatically without a check.

Multiple creatures can attempt to grapple one target. The creature that first initiates the grapple is the only one that makes a check, with a +2 bonus for each creature that assists in the grapple (using the Aid Another action).

As to what to do once the NPC is down: Pin, then steal (http://www.d20pfsrd.com/gamemastering/combat#TOC-Steal) their stuff (and disarm (http://www.d20pfsrd.com/gamemastering/combat#TOC-Disarm) them). They get no Dex bonus to their CMD and an additional -4 penalty from being pinned, so even an unassisted monkey should be able to easily steal things. Nothing is more frightening to PCs than having their precios things taken away.

AD&D 2e PHB at least includes rules for just piling upon somebody (alive or dead) until they can't move á la Húrin in the Battle of Nírnaeth Arnoediad. Perhaps usable. I'll check when I get home.
