So I'm starting my own campaign and while I've run games before this is my first time creating my own.
Q1
So I understand the thresholds for encounter difficulty. But how do you know/plan how many encounters "per day"?
Q2
How accurate is the CR system

The way I do it a single dungeon is 1 day. My players have the habit of not going in to a dungeon without having full spellslots ecc anyway.
Random encounters I usually try to make them hard since the players have a lot of resources usually and don't need to go on after.

Cr doesn't work for me I usually just use the exp threshold to calculate how strong the encounter should be. Anyway it differs a lot per group I imagine and you just need to keep a good eye on how well your group does and adjust accordingly

1) The advice in the DMG is 6-8 encounters per day. Difficulty may depend on your group and style of play. I would lean towards the harder end.

2) Very inaccurate if you mean the MM. Even the DMG table is too light on details about mobility etc..
