The elf-hating ranger will still hate her as before, she's still holding the [elf] subtype through all of this. All magics and whatever else that apply to elves will still apply to her as normal, unless her undead immunities block something. (Is there an enchantment like keen vs elves?)

As for the second point, the "type pyramid" guidelines in Savage Species backs up common sense; that is the undead [elf] ignores the part of the PrC that changes type to outsider. Undead is an end-state type, unless resurrection happens. Now, if your elf lich Divine Disciple is somehow returned to life, she would come back with her type as Outsider [elf][evil][chaotic].
