What is the best sumo wrestler build? Would a sumo wrestler make sense to be a weak caster?

I agree that tetori is the best "wrestling" class, but sumo is not really wrestling in the Roman-Greco sense. It is more about pushing an opponent out of the ring or knocking them down. In PF terms, it would be focused on tripping and bull rushing.

A master of maneuvers monk or monk of the iron mountain would be good sumo wrestlers. A 4th level monk of the iron mountain who stayed in the same space is undefeatable in a sumo match.

Sumo does have religious origins, so you could go for a martial focused divine caster. Warpriest, paladin, or even cleric could be built to be sumo wrestlers. Sacred fist warpriests and Ecclesitheurge clerics can't wear armor, so those probably fit best. You could even go fighter-unarmed or lore warden would be good choices here. Or mix and match any of those classes as you see fit.

Yeah, Sumo would certainly be in the strength domain and probably glory. You could swing war as well.
