One question. Where did the Gloom monster from ELH get the Insight bonus to AC? I can't find a reason why it should have it and why its a 12 and also how changing its HD would affect that. Anyone know? Is it like 1/2 HD rounded down? Thats my best guess.

I do not see any source for that AC bonus either, but I noticed two things:
The entry in the SRD is different from the one in the Epic Level Handbook, although the one in the ELH does not have a source for the Insight bonus either
Many epic monsters have an insight bonus to AC which they should not have. I think it was a way for the authors to bring the AC to a level they deemed appropriate.

Then howbwould I apply the Insight bonus on an enlargement of a Gloom or a Fusion+AstralSeed combi from someome else with a Gloom? Should I just keep it at 12?

Since there is not really a calulable source, I would keep it as-is. Or you could base it on 5+Wisdom bonus (which makes sense for an Insight bonus).
It may have the Paragon template.

It doesn't have any of the other benefits of that template though, it doesn't match up at all.

It doesn't need to be derived or change if the Gloom changes by advancement. It's not like a creature's starting Natural Armour has much in the way of a basis in the rules, after all (albeit it changes with advancement which changes size category).
If you want to change it as a DM, go ahead and do so.

Same reason monster X has +Y natural armor. It's just part of it's race. So it doesn't scale with anything and won't change with advancement.

Some creatures just have random bonuses. The Gray Jester, for example, has a +2 deflection bonus to AC, for no particular reason (unless it's tied to Int or Con, but that is not defined in the description).
