I'm curious if there's any rule, or otherwise how other DMs rule, on the interaction of Polymorph with a druid's Wild Shape, if it's considered a 'creature seen'

Polymorph turns a creature into a beast for all purposes for the duration of the spell so yeah it works.

I wouldn't go quite that far. The text states that the game mechanics change into those of the beast except for alignment. You also retain your personality.
@ OP: In the end, it's a question for the DM. I'd be heavily inclined to let it fly.
