I am trying to figure out how best to model this guy in Pathfinder.

Maybe an Oracle of Battle (blind)?

Or a monk and let the blindness just be flavour text?

How would you do it in Pathfinder? Assume that 3rd party sources are not allowed.

If spheres of power is on the table, might I suggest the Blind Swordsman (http://spheresofpower.wikidot.com/blind-swordsman) (Samurai Archetype).

It's funny, I was thinking of something like this just last night. I settled on a PoW Stalker with a quarterstaff and the Veiled Moon, Broken Blade, and maybe the Riven Hourglass disciplines. The blindness can be the actual debilitating status or not, doesn't matter. Without 3rd party, you can just go 100% Unchained Monk, with the Blind-Fight feat tree.
Here are some recommendations for the whole team.

Jyn: Unchained Rogue 6
Cassian: Fighter 6
Chirrut: Unchained Monk 2/Stalker 4
Baze: Barbarian 1/Gunslinger 5
Bodhi: Expert 3/Rogue 1

Bodhi, of course, must be Rogue 1. :smalltongue:

To echo others while adding more detail:

Weapon Adept Monk (VMC Battle Oracle)

Concentrate on using a Quarter Staff for your Perfect Strike/Way of the Weapon Master, grab the Clouded Vision Curse and the War Sight Battle revelation.
