Is there a general rule in Pathfinder that if a creature only has one natural attack, that it gets to apply 1.5 times to Str mod to the damage? If so, is a link to that rule? Thanks.

"yes" and "somewhere in the parts of the bestiary that isn't stat block".

There's a possible exception. In 3.5 some non combatant creatures such as riding horses had a single attack at x1 strength bonus. I don't know whether pf carried that forward.

PF has retained that exception, but made it a "Docile" feature, as seen in the horse entry. The default rule is as stated above.
