Any particularly dangerous spell that isn't targeted will do. For those, you're better off buying spellblades (PGtF).

EDIT: Specifically, buying a +1 gauntlet with as many iterations of spellblades you want/need/can afford (up to a maximum of 33, as weapons with a price higher than 200,000 gp are considered epic). If you're out of space on a gauntlet, buy a second one.

Ignoring wealth limits, what's the limit on the number of spell blades you can have? Could you enchant them on armor & shield spikes? Weapons rings? Does 3.x have boots with built-in daggers?

How many published, targeted spells are there? Could someone with enough money become "immune" to the uncreative caster who never invented his own spells with just pre-epic items?

Cast Divination. Ask what spells of 8th level or lower you are liable to be targeted with tomorrow.

Plan accordingly.

If you ignore wealth limits, per MIC rules there are no limits on how many spellblades you can have. Spellblade (spell keyed to it) is a weapon enhancement with a +6000 gp fixed price, so you can add it multiple times to any weapon including armor or shield spikes and hidden blades from Complete Scoundrel.
I do not know how many targeted spells have been published, but the amount of gold spellblading each one of them would require is definitely beyond the limit of logic.
You could only become immune to targeted spells with spellblades, but if we're strictly speaking about them then yes, you can theoretically become immune to all of them. If you have enough gold (or salt).
