Just for fun. What would you say is the easiest to hardest stats to roleplay a negative modifier? If you want to share, why do you say it?

I'd say easiest to hardest: Int, Cha, Wis, Con, Str, Dex.

To roleplay: all of them are easy. You are socially inept or softspoken, easily distracted, not well read, are easily winded, clumsy, or have the physique of someone who doesn't toil the fields for a living. a -1 isn't a huge difference.

To deal with in terms of game rules and effects: Int, Cha, Str/Dex, Wis, Con. Not knowing things and not being a good social manipulator can be smoothed easily if someone else does it. Not knowing what's happening (perception, insight) is a bigger issue - plus the whole mental domination thing. As an adventurer, particularly in a game that involves a lot of poisons, diseases, and damage sources, being of below-average vitality tends to cut your career short.

Strength and Dexterity can, to an extent, be interchangeable. There are distinct advantages to dexterity (being demi-god stat and all), but you can function well without it if you emphasize strength (heavy armor and athletics). You can get by with minimal strength if you play up your dexterity.
