So is there any spell that allows one to summon or call a plant creature of your choosing, similar to planar binding?

Just use planar binding to summon a half celestial/fiendish version of the plant creature you want?

Otherwise, the Greenbound Summoning feat in Lost Empires of Faerun is thematically appropriate.

Calling templated creatures with planar binding is a sure path to madness.

There are a bunch of custom summon lists for specific religions, these usually add or swap out Summon Monster X or Planar Bindings with specific things for servants of whatever specific deity. I don't know if one deals with plants off hand, but it wouldn't break the game to hash out a custom list for a character with the DM.

Funnily enough you actually can't call fiendish or celestial creatures with planar binding, because they don't actually become outsiders. Animals and vermin become magical beasts, and everything else remains their normal type

The summon plant ally feat from pathfinder adds a bunch of plant creatures to the list, if you're allowed to use pathfinder material.
