Is this even POSSIBLE? to hit one Undead with a Smite Evil and have its 3 closest allies take a boatload of holy damage?

A 5th-level war mind can attack two squares with a single attack, so if there's four undead in them a smite would hit all.

either is doable, we're doing 3.5 but he lets some pathfinder stuff in

The War Hulk prestige class in the Miniatures Handbook gets Great Swing at 1st level, which is a full-round action to make a single attack that his three adjacent squares. At 4th level you get Mighty Swing, which does the same thing but as a standard/attack action, so you can full attack and make multiple such swings. At 10th level every attack you make hits every creature you're threatening.

The Silver Pyromancer can do something similar with Smiting Spell applied to some fire spells, it is bonus damage, you can decide if it is fire or holy and blinds evil creatures

IIRC, there's a stipulation with War Hulk which indicates specials only affect the first target. Not sure if that applies to smite.

Great Flyby Attack plus reach. It's a single attack against n=Dex targets that are within your reach as you move up to your normal flying speed.

Or use the Smiting Arrow ACF from Dragon 349 p. 93 in order to get the ability to apply smite to any 30 ft ranged attack. Then use whatever volley-mass-attack combo you find suitable.

nope. it's referring to "special attacks" meaning things like trip, disarm, and sunder.
