Or otherwise turn a non-humanoid into an undead?

How do you all handle that undefined place in the rules at your tables?

nothing. finger of death does something extra when it kills a humanoid. if the target was not a humanoid, it does nothing extra, and simply kills the target.

You could just raise it, drop the hp a little and slap the undead resistances on it.

Just like the necromancer in Diablo 2. The corpse explode and an humanoid undead is there in it's place.

They really should put a way to have zombie and skeleton of any monsters... They'd have to count as X undead depending on the CR for the upkeep and maybe need higher slots to animate.
