Are there any prestige classes that advance monk unarmed damage/levels while also giving +1 attack/level, or are they all medium-advancement (3/4 lvls)

If you take the Tashalatora feat, any psionic class, irrespective of the base attack bonus it grants or whether it's base or prestige, grants monk progression. Notable prestige classes include the War Mind and the Slayer, which both have full base attack. Outside of that, you're unlikely to have much luck.

Dang. Our campaign explicitly has no psionics.

Shou Disciple (Unapproachable East), Fist of the Forest (Complete Champion), and Sacred Fist (Complete Divine) all are Full BAB and advance Unarmed Strike.

Correction, one psionic class grants monk progression. The class that you select for Monastic Training to be specific.

Yes, any, not all or every. Any one class. Chosen by you. When you take monastic training.

If a class feature allowed you access to "Any feat" as a bonus feat, would you really try to take every feat with it?

Good stuff, thanks! Sacred fist seems pretty thematically appropriate, too.

Edit: Follow-up question:

When something progresses monk unarmed damage, does that include the magic/lawful/adamantium qualities?

Did the DM give any particular reason(s) for banning psionics? Just curious.

No, that is the Ki Strike class feature.

Knight of the Sacred Seal (Ronove) would give you a monk's unarmed damage progression and overcomes damage reduction as if magic, cold iron, and whatever non-neutral alignments you have.

Is there any other way than a binder PrC or monk level 10 to get lawful ki strike?

Probably not, but if you're going to go Sacred Fist, you're going to have other means of enhancing your abilities. Clerical casting is pretty handy for buffs, healing, and other shenanigans. With all the splatbooks out there, you might be able to find a cleric spell that suits your needs.

That said, I know psionics has a feat for expending your focus to make your attack aligned to one of your alignment components (chosen when you pick the feat), but that's out because you said no psionics. I think Cleric gets Align Weapon as a second level spell or something? So if you can cast that on your first, which definitely counts as a weapon when you're doing enough damage to kill a man in a single blow and not provoking attacks of opportunity for attacking with it...

Yeah, Sacred Fist is probably going to do you pretty good with buffs. And the Strength Domain might give you some good mileage there with buffs, since it brings Divine Power down to a 3rd level domain spell, as I recall. Very nice. Improves your BAB based on your caster level, +6 strength, and I can't recall if it does temp hp or not. Even if it doesn't, you have spells for temp hp, for stat buffing, for ac and attack increases all under spell level 3.

Two levels of Monk of the Enabled Hand will do it, as will monk and ninja levels adding up to 10 with ascetic stalker.
