Is there a method behind the stat blocks of monsters?

I remember in the old days of 3.5, you could figure up what a monsters "racial" bonuses to ability scores were by taking I think the non-elite array or standard array and subtracting them from the scores or something like that.

Is there anything like that for 5e?

Nope. Monsters be monsters. They don't have classes or racial features.

There are some numbers on page 282 of the DMG; that's about as close as you'll get.
