How many undead you can control depends on your level (although you are obviously at least 6th to qualify as a Death Knight), however it quickly becomes "more than is feasible to ask the DM or yourself to manage".

You have multiple means of controlling undead.
1) Death Knights control up to twice their HD in ghouls/ghasts/skeletons/zombies. I suggest Ghasts.
2) Animate Dead is either 4*caster level or (4+cha mod)*class level. So from 8th level on, that will be 19 HD per class level. Probably worth using 20HD skeletons
3) Rebuke Undead controls 2HD per class level. This is a small pool but you can use it on almost anything. I suggest utility undead like a Wraith and a Slaymate.
4) The Command Undead spell (this is where you quickly exceed the too many undead threshold)

Assuming you are an 8th level Dread Necromancer:
1) 4 Ghasts
2) 7 20HD Skeletons
3) 1 Slaymate, 1 Wraith, 7HD more of utility undead
4) Until happy, +1 20HD Skeleton.
