If you cast Hex (spell), and choose for example Strength for the chosen ability, and try the maneuvers Disarming attack and Trip attack (PHB 74p.), the enemy have disadvantage in the save throws (STR)? In general question the Hex spell causes the target to have disadvantage to save throws too?

Sorry but Hex only gives disadvantage on ability checks made with the chosen ability.

It doesn't affect saving throws or attack rolls.

So the target of the hex rolls normal the strenght saving throw for the trip or disarming attack?

There are three (main) types of rolls in 5e; attacks, checks, and saves. Hex affects checks, not saves or attacks.

Yes as those are both saving throws.

If you were to try and shove them prone however for example, that would be an athletics ability check and they would have disadvantage.

Yes. Those are saves, and hex affects checks. If you tried to grapple them, they would have disadvantage, as grapples use checks.

Some spells do create *checks* not saving throws though, so some utility in that regard remains

What you want for messing with saves is Bestow Curse.
