Can someone give me the low down on the Paladin / Sorcerer build I keep seeing.

Any good guides?

And what sub-classes for both?

Probably one of the best powerhouse multiclass combos out there. Was my second character in 5e (after the also powerful Lore bard):

Baston Everstorm: Gold Dragonborn Pal6 (Vengeance)/Sorc11(Wild), Great Sword (GWM) using, tactical nuke. So many spell slots to smite with. Can haste myself, use shield. Can Quicken Fireball+Double Smite with my high level spell slots (that I can't use for spells anyway in some cases). Also a face and a lovable braggart.

But yeah, check out the guide mentioned above. I just found that. Solid advice there.
