so last nights solo game had a level 2 ranger staring up at a giant dire rat coming out of a nest in a section of the sewer, now i'm obvisoluly making this giant dire rat due to no giant dire rat being available, id just be adding giant template to dire rat now my question is would this go up 2hd due to it being 2 sizez larger or is the hit die just bigger? also would it be +3 natural armor or just 2 I thought it was +2 and hd 2 but someone said to be the hit die goes up one size? am I wrong

3.5 of Pathfinder?

If PF, the Giant Creature template (http://www.d20pfsrd.com/bestiary/monster-listings/templates/simple-template-giant-cr-1/) doesn't change their HD, rather it gives them more hit points by increasing their Con. Their attack dice would go up in value though.

+2 to all rolls based on Str or Con, +2 hp/HD

that's just stating +2 hp per hd or +2hd

You can either use the regular creature HD advancement rules, or you can use one of the "Simple Templates" to change a basic creature. Psyren used the "Giant Creature" template with the "No rebuilding" option. Saves a lot of time and work.

okay I understand the only thing I question is the statement (+2 to all rolls based on Str or Con, +2 hp/HD,)
that's stating +2hp per hd correct

Even with full rebuild it doesn't add HD, just HP (by increasing Con.)
