If I do this, will I get Nar Demonbinder's level 1, 3, and 5's class features, or only level 1, 2, and 3's class features?

Each time a multi*class character achieves a new level, they either increases one of their current class levels by one or picks up a new class at 1st level.

Yeah, your class features are based on your class level (i.e., the number of levels you have in a particular class). Under no circumstances are you allowed to skip levels.
