Because we all want to play a gruesome tentacled monstrosity from time to time. It's got tons of subraces because more options are always nice.

And yes, half-illithid are totally a thing, or at least they were in 3.5. It's in the Fiend Folio, look it up.

Half-Illithid
Ability Score Increase. Your intelligence score increases by 2.
Age. A half-illithid's maximum age depends on the humanoid it was created from.
Alignment. As creatures who tend to share their creators' disregard for other life and unquestioning obedience, half-illithids are typically lawful evil. Those freed from their control tend to assume the former alignment of their host.
Size. Half-illithids are medium-sized by default.
Speed. Your base walking speed is 30 feet.
Darkvision. Thanks to your latent psionic abilities, you have superior vision in dark and dim Conditions. You can see in dim light within 60 feet of you as if it were bright light, and in darkness as if it were dim light. You can’t discern color in darkness, only shades of gray.
Innate Spellcasting (Psionics). You know the Friends cantrip. When you reach 3rd level, you can cast the Charm Person spell once with this trait and regain the ability to do so when you finish a long rest. When you reach 5th level, you can cast the Detect Thoughts spell once with this trait and regain the ability to do so when you finish a long rest. Intelligence is your spellcasting ability for these Spells.
Languages. You can speak Common and Undercommon.
Subraces. There exist many specific kinds of half-illithid, depending on the humanoid they originate from. Choose one of these subraces.

Dragonborn-Born Half-Illithid
Ability Score Increase. Your strength score increases by 1.
Vomiting Forth Long-Forgotten Thoughts. You can use your action to emit an energy wave not unlike an illithid's mind blast. This is a 10 ft. cone. When you use this ability, each creature in the area must make an Intelligence saving throw. The DC for this saving throw equals 8 + your Intelligence modifier + your proficiency bonus. A creature takes 2d6 psychic damage on a failed save, and half as much damage on a successful one. The damage increases to 3d6 at 6th level, 4d6 at 11th level, and 5d6 at 16th level. After you use this ability, you can’t use it again until you complete a long rest.
Languages. You can speak Draconic.

Dwarf-Born Half-Illithid
Ability Score Increase. Your constitution score increases by 1.
Corrupted Flesh Withstanding Toxins: You have resistance to poison damage.
Mountain's Slowness. Your base walking speed is 25 foot, rather than 30 foot.
Languages. You can speak Dwarvish.

Elf-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
Unending Vigilance of the Perfected Mind. You do not sleep. Instead, you must meditate for 4 hours to gain the same benefit a human does from 8 hours of sleep.
Languages. You can speak Elvish.

Halfling-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
Chance-Eliminating Calculative Precision. When you roll a 1 on the d20 for an attack roll, ability check, or saving throw, you can reroll the die and must use the new roll.
Small Stature. Your size is Small rather than Medium. In addition, your base walking speed is 25 rather than 30 ft.
Languages. You can speak Halfling.

Gnome-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
A Mind Alike A Fortress. You have advantage on Intelligence and Charisma saving throws.
Small Stature. Your size is Small rather than Medium. In addition, your base walking speed is 25 rather than 30 ft.
Languages. You can speak Gnomish.

Half-Elf-Born Half-Illithid
Ability Score Increase. Your charisma or wisdom score increases by 1.
Subtle Manipulator of the Feeble-Minded. You gain proficiency in the Persuasion skill.
Languages. You can speak Elvish.

Half-Orc-Born Half-Illithid
Ability Score Increase. Your strength score increases by 1.
Gruesome Mutilated Visage. You gain proficiency in the Intimidate skill.
Languages. You can speak Orc.

Tiefling-Born Half-Illithid
Ability Score Increase. Your charisma score increases by 1.
A Body Formed By Flame. You have resistance to fire damage.
Languages. You can speak Infernal.

Aarakocra-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
Unending Cascade of Razor-Like Claws. You are proficient with your unarmed strikes, which deal 1d4 slashing damage on a hit.
Langugaes. You can speak Aarakocra and Auran.

Genasi-Born Half-Illithid
Ability Score Increase. Your constitution score increases by 1.
Skin Tempered by Chaos. You gain resistance to either Acid, Cold, Fire, or Lightning damage.
Languages. You can speak Primordial.

Goliath-Born Half-Illithid
Ability Score Increase. Your strength score increases by 1.
Hulkish Physique Conquering Obstacles. You are proficient in the Athletics skill.
Languages. You can speak Giant.

Aasimar-Born Half-Illithid
Ability Score Increase. Your charisma score increases by 1.
Shield of the Guttering Soul-Candle. You have resistance to radiant and necrotic damage.
Languages. You can speak Celestial.

Bugbear-Born Half-Illithid
Ability Score Increase. Your strength score increases by 1.
Nothing This Big Should Be This Quiet. You are proficient in the Stealth skill.
Languages. You can speak Goblin.

Firbolg-Born Half-Illithid
Ability Score Increase. Your wisdom score increases by 1.
Whispering Defiled Words to the Unnatural. You can communicate in a limited fashion with oozes and aberrations, even if you do not share a language, or if the creature in question would not be intelligent enough to normally communicate. They understand the meaning of your words, though you do not have the ability to understand them in return.
Languages. You can speak Giant or Elvish.

Goblin-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
Skulking Rat Eluding Pursuit. You can take the disengage or hide actions as a bonus action on each of your turns.
Languages. You can speak Goblin.

Hobgoblin-Born Half-Illithid
Ability Score Increase. Your constitution score increases by 1.
A Body Made For War. You are proficient with light armor and with a martial weapon of your choice.
Languages. You can speak Goblin.

Kenku-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
Fluttering Body Scoured of Redundancy. You have proficiency in the Acrobatics skill.
Languages. You can speak Auran.

Kobold-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
Have Pity on this Cursed Slave. As an action, you can distract nearby creatures with your wretchedness. Until the end of your next turn, your allies gain advantage on attack rolls against enemies within 10 feet of you. Once you use this trait, you must take a short or long rest before you can use it again.
Languages. You can speak Draconic.

Lizardfolk-Born Half-Illithid
Ability Score Increase. Your constitution score increases by 1.
Scarred Flesh Deflecting Blows. When you are not wearing any armor, your AC is 13 + your dexterity modifier. You can use this ability to determine your AC if your armor would give you a lower AC. Shields work normally.
Languages. You can speak Draconic.

Orc-Born Half-Illithid
Ability Score Increase. Your strength score increases by 1.
Approach, Eliminate, Continue. As a bonus action, you can move up to your speed towards a hostile creature you can see or hear. You must end this move closer to the enemy than you started.
Languages. You can speak Orc.

Tabaxi-Born Half-Illithid
Ability Score Increase. Your dexterity score increases by 1.
It Crept Up Unceasingly. You have a climb speed of 20 ft.
Stalking Shadows Dripping with Ooze. You have proficiency in the Stealth skill.

Triton-Born Half-Illithid
Ability Score Increase. Your strength score increases by 1.
It Came From the Depths. You can breathe water, and you have a swim speed of 30 ft.
Call to the Blackwater Beasts. You can communicate in a limited fashion with monstrosities, oozes and aberrations that breathe water, even if you do not share a language, or if the creature in question would not be intelligent enough to normally communicate. They understand the meaning of your words, though you do not have the ability to understand them in return.
Languages. You can speak Aquan.

Yuan-Ti Pureblood-Born Half-Illithid
Ability Score Increase. Your charisma score increases by 1.
Born From Venom. You have resistance to poison damage.
Languages. You can speak Abyssal or Draconic.

No Half-Human?

No. The original fluff regarding half-illithids is that they're what happens when a non-human humanoid gets one of their spawn implanted. A human would've turned into a proper illithid, but nonhumans instead become half-illithids.

(Of course, this contradicts several other sources, including Lords of Madness, and is quite illogical because humans are uncommon in the Underdark, but who cares, it's cool).
