If you're a monk and you use mage armor do you still gain wisdom bonus to your AC?
Like 13 +DEX +WIS?

For example. A monk with +3 to dex and +3 to wisdom. Has 16 AC with unarmored defense.

If the monk has mage armor does his AC become 19 instead?

They do not stack with each other. You can choose to have the AC conferred from mage armor, or unarmed defense, but you can't pick and choose certain elements from each one

13 + 3dex = 16

10 + 3dex + 3wis = 16

This is all correct. To get into more detail, AC is calculated as 10+DEX. Unarmoured Defense gives you an alternate way to calculate AC, being 10+WIS+DEX instead. Mage Armour is another alternate way, being 13+DEX. If you have them both, you now have two alternate ways, that replace each other as well as the base.

Just to follow up on this for the OP:

Unarmored defense isnt a bonus, it's an equation. Bonuses to AC stack (like a Ring of Protection), but you have to chose which equation you use first (like the option from Mage Armor).
