I'm trying to compile a list of... not necessarily the best PrCs as the most interesting ones. Not the ones that provide bonuses to the stuff you have, so much as the ones that grant significant new abilities that become a major part of how the character plays. I'm thinking about things like the Chameleon, the Hellreaver, the Suel Arcanamach, the Psibond Agent... even things like the Mage of the Arcane Order. At the very least, new active abilities that can be used a meaningful number of times/day, and new passive ones that are big enough to be useful.

I've been trying to be systematic about it; so far, I've flipped through a few books and come up with:

Bear Warrior-- turn into a bear, c'mon, how do you not love it?
Hulking Hurler-- cheese aside, you get some cool throwing stuff
Kensai-- good for warrior-ing and major social benefits.
Master Thrower-- cool throwing stuff
Warshaper-- a dur.
Mage of the Arcane Order-- Spellpool is a fun mechanic
Suel Arcanamach-- Strong new casting
Divine Crusader-- strong new casting
Combat Trapsmith-- at-will special attacks
Montebank-- at-will Alter Self!
Psibond Agent-- so many fun things to do with the bond, all at-will
Beast Heart Adept-- gain powerful and weird animal companions
Trapsmith-- strong new casting
Sand Shaper-- making stuff (and critters) out of sand
War Weaver-- awesome new buffing strategy

So, what are some of your favorites, along those lines?

I like the fatespinner, the first 4 levels are pretty much ok, but it's the idea of manipulating probabilities that makes the difference in my eyes.

Nar Demonbinder. Pigeonholes you into planar binding and kills everything else.

Shadowcraft Mage. It's fun using only shadow casting.

I love the bloodstorm blade.

Beastmaster from Complete Adventurer is really fun in my opinion. You can play it like a pokemon master or some sort of feral animalistic person. I prefer using it on a Druid for the pokemon master style or a ranger for the feral idea. Either way one of my favorite prestige classes.

Also, what do you think about chameleon? Although it has a strange power-to-level curve, I am fascinated by its rather unique mechanics...

Knight of the Weave - strong new casting and accessible through BAB or spellcasting base.

It's an odd class, but I sorta like Flux Adept from Dragon Compendium. It's got a number of weird bonuses like being able to eat anything and boosts to a few skills. The highlight is Polyhaemia which lets you reuse the benefits of an ingested potion. The other really interesting feature is access to (Ex) Haste a couple times a day.

Frenzied Beserker (I learned about this PrC the hard way when we were fighting a boss, luckily the FB rolled poorly. All in all it was a climactic end/extension to a boss fight).

Initiate of the Sevenfold Veils can be interesting flavor-wise if you really focus on using all prismatic spells and hunt down the actual veils from the MIC.

I'm looking for interesting mechanics, not flavor. But that does sound like a fabulous idea.

Whoops, I started thinking about lots of PrCs and forgot the thread's purpose. On topic then, the PrCs that are highly customizable based on entry class or specialization are interesting mechanic wise...such as Master Specialist from CM, which grants varying abilities depending on the Wizard's Specialization; the Mythic Exemplar and Squire of Legend from CC both require you to pick a paragon to follow which determines what abilities you obtain.

Some that I like thematically:

Alienist (CAr): Lovecraftian summoner :smallcool:
Cancer Mage (BoVD): lots of interesting and thematic abilities
Death Delver (HH): love the fluff of this class (obsessed with the mysteries of death), and most of the crunch
Divine Crusader (CD): embody one of your deity's domains
Dragon Disciple (DMG): love the concept, the less siad about the mechanics of the class the better
Dread Commando (HB): fantasy special ops
Elemental Warrior (PlH): chose one of the four elements, and gain abilities based on that element
Green Star Adept (CAr): love the concept, but pretty much usually reviled for the crunch
Master of Many Forms (CAd): aside from abuse potential, I really like the idea of a class built around shape-changing
Master of Masks (CS): love the whole "abilities by mask" concept, but crunch could be a bit stronger
Paragnostic Apostle (CC): love the Greyhawk related fluff, and the fact that you can chose which path you want to follow for different abilities
Primeval (Fr): love everything about this one
Shadowblade (TOM): enhance your weapon with various shadow based abilities
Skullclan Hunter (MH): Rogue who hunts undead. Pity you need turn undead (pretty much every undead hunting class required turning or casting; why not just go straight cleric?)
Stoneblessed (RS): short PrC that reflects your bond with a chosen race
Stormcaster (St): storm themed caster
Urban Soul (RD): protector of the city with some cool thematic abilities

Planeshifter is an obscure prestige class from Manual of the Planes. Gives a bunch of crazy abilities; I used it in a recent Villainous Competition. Eventually you can get at-will Plane Shift and the ability to carve out chunks of one plane and plunk them down in another.

I really like the Sacred Exorcist and the Radiant Servant of Pelor. The have a real identity as a PrC instead of just something to dip for abilities. And their abilities are good.

I second Bloodstorm Blade. A really cool prc that combines melee with range attack and let em count as melee again. Opens up heavy ranged ubercharger cheese. It helped me to complete 2 builds I was trying to build for a longer time. One is the Hammer(din) of Moradin build, the other my ShurkeNado build. And while we are at Hammer of Moradin, it's another really fluff-full prc which gives you some interesting and odd abilities.
