I'm currently away from books for a while, but I recall reading you could take stances in place of maneuvers as an initiator. Am I remembering that wrong?

You are, sadly. Stances known are on a separate progression.

And in the case of a Crusader a level to fast.

They do however count for prerequisites, IIRC.

yeah, they count as maneuver known, as prerequisite when you learn other maneuvers.
