I know that Solars cast as clerics and older dragons cast as sorcerers. Are there any other monsters with different casting classes?

A number of fey (such as Nymphs) cast spells as a druid.

Unbodied are Psions (telepaths specifically.) I believe Rakshasa cast as sorcerers too, and Lillends cast as bards.

Phaerrim cast as sorcerers except they're SLAs. Ethergaunts cast as wizards. Spellweavers cast as wizards but can cast multiple spells by using one arm per spell level.

Aurak and baaz draconians, red spawn arcaniss, ki-rin, most naga, dragons, spell weavers, phaerimm, aranea, sylphs, elemental weirds, couatl, are sorcerers.
Lillend and glouras are bards.
Lilitu are "clerics."
Ghaele eladrin and trumpet archon are clerics.
Driders are special.
Hobgoblin war casters and warsouls, ethergaunts, ursinals, cast as wizards.
Banelar and elder titans cast as clerics and wizards.
Sharns are favored souls and sorcerers.
That is all off the top of my head. (Also WTH Faerun!)

Not particularly. It was just a random thought. Though I may end up using these guys in a SoP game I'm GMing and applying the appropriate archetype to make the SoP coverted.

Sharns have both innate Sorcerer spellcasting AND innate Favored Soul spellcasting.
