Get an exotic saddle, and ride them normally. You can use the Ride skill to ride any given creature (http://www.d20pfsrd.com/skills/ride), but you'll take a –5 penalty on your Ride checks for riding "a creature that is ill suited as a mount."

The bird's carrying capacity may be an issue, though.

Giant falcon (http://www.d20pfsrd.com/bestiary/monster-listings/animals/birds/falcon-giant-tohc/). 258 lb light load. 4000 gp for young falcon + training.

Giant raven (http://www.d20pfsrd.com/bestiary/monster-listings/animals/raven-giant/). 58 lb light load. No information on buying or rearing.

Order of the Beast (http://www.d20pfsrd.com/classes/base-classes/cavalier/orders/paizo-cavalier-orders/order-of-the-beast-acg/) lets you shapeshift your standard cavalier mount into any Large animal, which will get you lots of flying forms. At higher levels, you can even turn it into a dragon.
