So at first level as a Monk it really boosts your damage if instead of using a club and a fist (2d4/2-8/5 average) you use a 2-handed quarterstaff and a kick (1d8 + 1d4/2-12/7 average). Can you do "unarmed strikes" without an empty hand?

Yes, headbutts, kicks and the like are not done with hands. :)

Yes. Unarmed strikes may be made with any part of your body

Either way, you can hold your staff with only one hand, so after striking with it, you can take one hand off and strike with that hand.

The real treat is you can make unarmed strikes even with the hand holding the weapon!

You can even kick the quarterstaff and bounce it off your opponent's nose back into your hand!
