What slots are available for non-humanoid forms? Like Hydra, Griffon, Lion, Horse, Naga, True Dragon, Girallon and so on. The question is stipulated by polymorph spells. I'd like to know what items could wizard keep after transformation and what items are unusable.

Most Item slots can be used for non-humanoid forms, with certain obvious exceptions. Forms without hands at all cannot use gloves or gauntlets, for example. Some would require DM adjudication or permission to alter the slots. Bracers could probably be used on the forelimbs of a quadruped, but would require DM permission, as would using standard magic armor or robes on a form with a much different shape.

Both Draconomicon and Lords of Madness go into this for specific creatures. I suggest looking at those and then extrapolating for whatever else you're trying to gear up. There's a giant eagle ranger NPC statted up in Champions of Valor, but all he has is 2 rings and an amulet.

A creature with a beholder-shaped body can wear the following magic items:

• One headband, hat, or phylactery on the body. A beholder
can only wear a helmet specially designed to fit over the
creature’s entire body.
• Three pairs of eye lenses or goggles over the central eye and up to two eyestalks (one pair per eye or eyestalk).
• Three amulets, brooches, medallions, necklaces, periapts, or scarabs on up to three eyestalks (one item per eyestalk).
• One belt worn about an eyestalk.
• One pair of bracers or bracelets on a pair of
eyestalks.
• Up to three rings on up to three eyestalks (one ring per eyestalk).
